CNA Posted March 4, 2007 Share Posted March 4, 2007 Low Fat Chocolate Cake with either confectioners sugar or fat free chocolate frosting1 1/4 cups all purpose flour1 cup sugar1/2 cup baking cocoa1/4 cup cornstarch1/2 teaspoon baking soda1/2 teaspoon salt4 egg whites1 cup water1/2 cup corn syrup2 teaspoons confectioners sugarIn a bowl, combine the first six ingredients. In another bowl, whisk egg whites, water, and corn syrup. Stir into dry ingredients. Pour into a 9-inch square baking pan coated with nonstick cooking spray. Bake at 350 degrees for 30 - 35 minutes or until a toothpick inserted near the center comes out clean. Cool on a wire rack. Dust with confections sugar. Yields 12 servings.Nutrition: One serving equals 176 calories, 1 g fat (trace saturated fat), 0 cholesterol, 186 mg sodium, 42 g carbs, 1 g fiber, 3 g protein.FAT FREE QUICK CHOCOLATE FROSTING1/2 cup cold skim milk 1/2 teaspoon vanilla extract 1 pkg. Dream Whip 2 oz sugar-free Chocolate pudding mixBlend together skim milk, vanilla, and Dream Whip. Beat until stiff. Add pudding mix and continue to beat until light and fluffy. Add more skim milk if too thick. Use as frosting on low-fat cake, cupcakes or brownies.Nutrition: 1 tablespoon is 9 calories, 0 cholesterol.
