Ciro Posted May 10, 2006 Share Posted May 10, 2006 (edited) Ingredients for 56 oz cubed and toasted crusty Italian or French bread.3/4 lb tomatoes2 tsps minced garlic2 oz celery hearts, sliced thin4 oz seeded diced cucumber3 oz diced red pepper3 oz diced yellow pepper10 fillets anchovies(optional)1 tbsp chopped capers4 leaves of basil chopped5 oz or as needed of Balsamic Vinaigrette.Combine all the ingredients, add the vinaigrette, toss to coatand serve immediatly.buon appetito, CD.Tip: Add one tea spoon of pesto to the salad for an extra touch.
