Full Version: Baked Tomato with Garlic

Here are just a few recipes for tomatoes that I like and use. Kat, you probably already know about these. This picture isn't the recipe below but it will give a visual of what it looks like. It's very good, very healthy, low fat, low calorie, and fills you up.

1 or 2 large round tomatoes cut in half
Garlic, sliced thin (however much you want)
Oregano
Basil
Olive oil
Mozzerella cheese, sliced
salt and pepper to taste

Cut tomatoes in half, pour or brush the olive oil on each one. Season with salt and pepper, place garlic slices on each half. Season with Oregano and Basil. Place Mozzerella slices over each half.

Bake at 350 F for about 25 or 30 minutes.



If you don't like Mozzerella cheese, use Parmesean or use different seasonings, etc. Pretty versatile. You can also eliminate the cheese and use garlic, lemon pepper, and/or a slice of lemon on top and bake it that way.

For breakfast or lunch

1 small Bagel, cut in half
Low fat cottage cheese
1 slice of tomato
Dill weed
salt and pepper
lemon juice

Spread low fat cottage cheese over bagel half, add tomato slice, squeeze small amount of lemon juice over tomato (optional), sprinkle Dill weed, salt and pepper to taste

You can eliminate the tomato and put cucumber slices, squash, or any veggie you want. Or eliminate the veggies and only use the low fat cottage cheese on the bagel and sprinkle with Dill weed or thyme or mint, etc.

Or to make it a bit sweet, spread low fat cottage cheese over bagel half and add freshly sliced bananas, freshly sliced strawberries, raspberries, etc., and sprinkle with nutmeg or cinnamon.

LOL. Oh, no, not at all. Maybe you have better suggestions or I can maybe teach you how to cook better or vice versa. You take pretty good care of yourself anyway so maybe you can give me some pointers, honey !!

Thanks for the recipe. It sounds a bit like bruchetta without the bread. I can see Tina making this in the microwave whenever there are tomatoes around. She loves tomatoes.
