Jonathan Posted December 7, 2012 Share Posted December 7, 2012 Butternut Squash BakeIngredients:1/3 cup butter, softened3/4 cup sugar2 eggs1 can (5 ounces) evaporated milk1 tsp. vanilla extract2 cups mashed, cooked butternut squashTopping Ingredients:1/2 cup crisp rice cereal1/4 cup packed brown sugar1/4 cup chopped pecans2 Tbs. butter, meltedDirections:1. In a large bowl, cream butter and sugar until fluffy.2. Beat in the eggs, milk and vanilla.3. Stir in squash (mixture will be thin).4. Pour into a greased 11x7 baking pan -- or 13x9 if you have a lot of squash.5. Bake, uncovered, at 350°F for 45 minutes or until almost set.6. In a small bowl, combine topping ingredients.7.
